Sweet Treats in the Lower East Side (NYC)

No-Bake Chocolate Peanut Butter Oatmeal Squares

I believe in healthy eating, as surprising as that may be considering I run a blog full of sugar and sweetness, but I promise you I don’t eat every single crumb of everything I bake. I know a lot of people are gearing up for their New Year’s resolutions (I’ve already started mine), and a lot of people want to eat healthier, so I have this recipe for you!
It has butter and chocolate and sugar and peanut butter! But it also has oats in it, so there you go, it’s healthy! I used 2% milk (you could use fat free or whole, probably even soy). Also, the butter can be replaced with margarine if you’re into that kind of thing. Totally health-ified. I also believe sweets are good for you in moderation (as in, don’t eat the whole tray of these, share with friends or put them out at your New Year’s party).
Oh, and they don’t require baking, just a couple minutes of cooking on the stove and a half hour on the counter. Make them and wrap a bunch up, eat one on your lunch break as dessert, and don’t feel guilty: it’s okay to indulge sometimes.

Foolproof Chocolate Fudge

It’s freezing out, snow is coming down hard, and the heater in my kitchen broke. I wanted to bake today but I don’t want to freeze to death so I decided to make something quick that will warm me up a little bit.
This fudge comes together quick with only four ingredients, but you need to let it sit at room temperature for 4 to 6 hours (or be impatient and cut after 2 and crack the surface of the fudge, eat a couple pieces, then just let the rest of the block finish setting).

Pumpkin Whoopie Pies

I’ve been wanting to make these whoopie pies for a month and I didn’t want to wait until pumpkin was out of season or totally irrelevant. I love pumpkin in baked goods, especially that pumpkin bread I never shut up about.
Whoopie pies are rumored to have originated in Lancaster, PA, it’s also rumored that upon tasting one, someone shouted “whoopie!!” which gave them their name. I tell that to everyone whenever someone mentions whoopie pies. You should too, especially to the people you share these with.

Chocolate Cinnamon Bread

Cinnamon is a great holiday flavor, it’s warm and smells amazing, it also compliments chocolate really well. The two are combined in this bread, which is almost like a cake, to create a perfect winter treat.
The topping is a mixture of sugar, cinnamon, cocoa powder, and a pinch of ground cloves. It creates a really nice crunch and it my favorite part of the bread.

Gingerbread Cookies

I love sugar cookies year round but when December rolls around all I want to do is eat gingerbread men. They are easily my favorite cookie but I’ve never made them before.
These are a little different because they have a hint of chocolate in them and are perfect. They are crisp but chewy at the same time, they won’t break your teeth but they don’t fall apart either, it’s the perfect texture. I decorated the cookies with cinnamon flavored royal icing and it was back breaking. While I was doing it, after I finished, and even when I woke up this morning, I had decided I never want to decorate cookies again. It’s a lot of work and a lot of mess, but now looking back at my finished cookies I am glad I did and can’t wait to try my hand at it again and get better and hopefully not have it be so back breaking. I think you should give it a shot, it takes some time but it isn’t really too hard.

Rodelle Chocolate Fudge Brownies

I don’t make brownies often, I’m more of a blondie person, but it’s hard to pass up a soft, fudge brownie, especially one with rich chocolate flavor. These are the kind of brownies I can’t stop eating.
They are soft, not overly sweet, and pack a rich chocolate flavor. They taste great on their own, drizzled with melted chocolate, a layer of powdered sugar, or my new favorite: a sprinkling of vanilla sea salt. I got my first experience with fleur de sel a few months ago when I was in Chicago and wanted to try it again and I’m hooked. It really works on top of these brownies and a little bit goes a long way.

Nutella Filled Thumprint Cookies

I’ve been churning out a lot of cookies lately, today is no exception.
These are brownie-like chocolate cookies with a Nutella disc on top. They aren’t as chocolate crazy as the cocoa dream cookies but they are far from underwhelming. I love the addition of the Nutella (if you don’t want to make the discs, you could just spread some Nutella on top of each cookie), it gives it a nice nut flavor without hiding the cocoa and milk chocolate elements.

Nutella Kisses

People love Hershey’s Kisses. People love Nutella. I thought I’d combine the two ideas into Nutella Kisses.
These are great eaten on their own, or you could press them into cookies (like these peanut butter cookies).
I had to seriously improvise with making them. I don’t have any chocolate molds, let alone chocolate molds in the shape of cones or kisses, so I really had to strategize. I shaped some into small discs for a recipe I’ll be posting tomorrow, you could also shape pipe them into dots to use as chocolate chips if you still don’t want to make the whole kiss (or are lacking the tools). They are really simple to make though and worth the effort. Check it out.
