Cocoa Dream Cookies

Cookie season is in full swing and it’s time to get those cookie sheets warm and fill your belly with fresh baked cookies.
It’s important to taste test things before you give them to your loved ones, I won’t tell if you eat a cookie or two or thirty before wrapping them up.
Let’s start with something easy, these cocoa dream cookies. It’ll get you back into the swing of things before we start having to roll out dough and use cookie cutters and piping tips. They come together quickly and bake up into delicious chocolate goodness, a crispy outside with a soft, chewy center. You can add chocolate chips to bring these over the top into a real “cocoa dream”. It’s the holidays, indulge a little.

Start by sifting the dry ingredients. It’s important or you’ll get these weird little chunks of cocoa powder in your cookies and all your friends will change their phone numbers and not tell you.

Mix the sifted dry ingredients in with the butter, sugar, eggs, and vanilla and you’ll get cookie dough. You could stop here and just eat the cookie dough, but I recommend baking it.

I added chocolate chips to half of my cookies (just by folding it into the batter). The cookies without chocolate chips spread out a little bit more and were similar to chocolate sugar cookies, the ones with the chocolate chips are more rounded and have intense chocolate flavor. I’m not sure which I prefer but if you’re really into chocolate, you should add the chips.
This recipe makes a little over 4 dozen, but you could cut it in half and make 2 dozen. They taste great warm or room temperature, just make sure you have a glass of milk nearby.

Cocoa Dream Cookies
Adapted from Very Best Baking
Makes about 4 1/2 dozen cookies
2 1/2 cups all purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) butter, softened
1 cup light brown sugar, packed
3/4 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs, room temperature
2 cups chocolate chips (optional)
Preheat oven to 375°F.
Sift together flour, cocoa powder, baking soda, and salt into a bowl. In another bowl or in stand mixer, beat butter, brown sugar, granulated sugar, and vanilla extract until creamy, about 3 minutes. Beat in eggs for 2 minutes, or until light and fluffy. Gradually mix in the flour mixture until just combined, do not overmix. Fold in chocolate chips.
Drop by rounded tablespoons onto an ungreased cookie sheet. Bake for 8 to 10 minutes or until cookies are puffed up. Cool on baking sheet for 2 minutes before transferring to wire racks to cool completely.

i tried this the other day with my cousin, we put in the chocolate chips and it was really AWESOME. i love it!
my oven only has temperatures of 180 and 200. so which one would be better for it?
is the oven in celsius? if so, use 180 degrees.
