Brown Sugar Meringues


I thought meringues would be harder to make, honestly. I’ve heard some sad stories about sticky meringues and things just not working out, but these were surprisingly easy. Maybe because it isn’t humid at all and there wasn’t much moisture in the air so everything worked in my favor.

These meringues have a subtle brown sugar flavor and are light as air, they are crisp but almost melt in your mouth. They also only require three ingredients: egg whites, brown sugar, and salt.


The egg whites and salt get whipped until they are really stiff, you should be able to hold the bowl upside down with the egg whites moving. From there you sprinkle in brown sugar and continue to whip.

It’s kind of magical the way egg whites expand from whipping.


They then get piped into little swirls and are baked to perfection.

They only take a couple minutes to make but about 2 1/2 hours to bake. You can also do it all in one bowl, super convenient and easy clean up.

Brown Sugar Meringues
Adapted From 1,001 Cupcakes, Cookies, & Other Tempting Treats

4 egg whites, room temperature
Pinch of salt
Scant 1 1/3 cups light brown sugar, packed

Preheat oven to 250°F. Line 3 large baking sheets with parchment paper.

Place egg whites and salt in a large bowl (or stand mixer bowl) and whisk until stiff. You should be able to turn the bowl upside down without any movement from the whisked egg whites.

Whisk in the light brown sugar, a little at a time; the meringue should begin to look glossy at this stage. Continue sprinkling the brown sugar until it has been completely incorporated and the meringue forms thick peaks.

Transfer the meringue mixture to a pastry bag fitted with a 3/4-inch star tip and carefully pipe small whirls of the mixture onto the baking sheets.

Bake in the preheated oven for 1 1/2 hours or until the meringues can be easily lifted off the paper. Without opening the oven door, turn off the oven and let the meringues cool in the oven.
