Pink Grapefruit Yogurt Cupcakes


These cupcakes came out of a crazy dream I had yesterday. I have some pretty crazy dreams sometimes and this was definitely out there, especially since grapefruit played such a huge part in it. I’ve never eaten a grapefruit before, I don’t even know if I’ve ever had something grapefruit flavored.

In this dream I had a grapefruit and I was preparing it to eat or bake with it or something. I was zesting it and thinking about what else I could do with it so I went online and remembered seeing a post about Grapefruit Scones over on Joy The Baker so I decided to check out her blog to see what to do with it and I came across a post about preparing grapefruit. Keep in mind this is all still in the dream and this post doesn’t exist on Joy’s blog. The post detailed about how you have to slice the grapefruit into a thin sliver and de-bone it. Yes, you have to remove the skeleton from the grapefruit. And I remember thinking to myself in the dream “wait, grapefruits have bones?” So I kept reading and it explained that grapefruit actually come from the ocean and are a type of fish, however the grapefruit fish aren’t killed, they wash up on shore already dead before they are scooped up by farmers and the post continued on to say that made it okay for vegetarians to eat. Being a vegetarian, I didn’t really see this logic, but my dream self pressed on. I had the grapefruit slivered and I could see through the pink flesh at a small skeleton like a hammerhead shark and the blog post told me I had to cut the side and then push the skeleton out. At this point I got really grossed out and woke up.


However, when I woke up I had an intense craving for grapefruit. I went over to Joy The Baker to check out grapefruit recipes, I wanted to follow through with whatever the dream was telling me and Joy always has fantastic recipes.


I also consulted my favorite dream interpretation website, Dream Moods, which told me:

To see or eat a grapefruit in your dream, represents a sense of well-being and a refreshed state of mind. Your are experiencing an uplift in your spirits and a rejuvenation of your body.


Alright, well, weird! Anyway, the whole point of that story is that I made grapefruit cupcakes. They are fluffy and tangy with strong flavor. I adapted the cream cheese frosting from the lemon cream cheese frosting I used for my Alex’s Lemonade Stand Cupcakes and it worked out nicely but these could be served plain or with a simple confectioners sugar/grapefruit juice glaze.

Pink Grapefruit Yogurt Cupcakes

Makes about 12 cupcakes

2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
3/4 cup granulated sugar
1 tablespoon grapefruit zest (about 1 grapefruit)
2 eggs
1 cup plain whole milk yogurt
1/3 cup vegetable oil
1 tablespoon grapefruit juice
1 teaspoon vanilla extract

Preheat oven to 350°F and line a cupcake tin with paper liners.

In a medium bowl, sift and whisk together flour, baking powder, and salt.

In a large bowl, combine granulated sugar and grapefruit zest. Mix together with your fingers or the back of the spoon until the two are completely combined, creating a fragrant grapefruit sugar.

Beat the eggs into the sugar until the eggs are thick and pale yellow. Add the yogurt, oil, grapefruit juice, and vanilla extract. Stir well to combine. Add the flour mixture a little at a time, being careful not to overmix, until it is all incorporated.

Scoop batter into the paper liners, filling each about 3/4 full. Bake for about 18-20 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in pan for a couple minutes before moving to a wire rack to cool completely.

Grapefruit Cream Cheese Frosting
Adapted from My Baking Addiction

8oz cream cheese, softened
1/4 cup (1/2 stick) unsalted butter, softened
3 1/2 cups confectioners’ sugar
1 teaspoon vanilla extract
3 to 4 teaspoons grapefruit juice (or to taste)

Using a mixer, beat the butter and cream cheese until well combined. Gradually sift in confectioners sugar until fully incorporated and desired sweetness and consistency. Mix in vanilla and grapefruit juice and mix until combined.

    Thank you for such a tasty and different recipe for cupcakes. We can say these are adult cupcakes for the most part, I think it would be fun to switch out different fruits with this recipe. Like strawberries, kiwis, etc…what do you think?

    I made something quite similar to these once, with a grapefruit slice as a garnish. Try greek yogurt, it is super thick, delicious.
