Key Lime Pie

A coworker of mine requested key lime pie, as tart as I can make it, without any fancy toppings to take away from the tartness. This is the result.
These would be excellent topped with whipped cream or meringue, left plain they are extremely tart. People with a high tart tolerance will like it a lot, or people who like the feeling of their face scrunching up so much it hurts.

The pie filling is only three ingredients: eggs, key lime juice, and sweetened condensed milk.
It’s important to use real key lime juice, I liked the brand above. I found it at Wegman’s but I think it can be found at most grocery stores. Ask a clerk, it wasn’t with the lemon juice and lime juice, it was off on a bottom shelf in some random aisle.
The recipe comes from Crumb Boss, she is a baker in northern New Jersey at Woodland Bakery (I haven’t had a chance to visit but I really want to try their crumb buns). She makes videos with her friend, Stephanie, that they upload on their youtube account every week. I think they are hilarious and the videos are also good for picking up a few tips or getting some good recipes.
Especially for tart key lime pie.

Key Lime Pie
Adapted from Crumb Boss
9″ graham cracker pie crust, recipe below
14oz sweetened condensed milk
5 egg yolks
1 1/4 cup key lime juice
Preheat oven to 325°F.
Whisk egg yolks and sweetened condensed milk together. Add the key lime juice and whisk until completely combined. Pour into prepared pie crust and bake about 20 minutes. It should be stiff and not move much, about the consistency of jello. Allow to chill in fridge for at least 1 to 2 hours.
Graham Cracker Crust
Adapted from Allrecipes
1 1/2 cups graham cracker crumbs, finely ground
1/3 cup sugar
6 tablespoons unsalted butter, melted
Preheat oven to 375°F.
Combine graham cracker crumbs, sugar, and butter and mix until well blended. Press into a 9 inch pie plate. Bake for 7 minutes. Let cool before adding filling.

Looks really good. I made one with my brother a few years ago as he loves these, not my taste though, a bit too tart.
I made a key lime pie last Thanksgiving and was surprised at how easy they are to make. I just wish they looked more green. I guess that’s what food coloring is for.

That looks yummy, but was never a fan of key lime pie. How long did the whole process take for you to make them? Thinking of making them for a party.
It took less than 5 minutes to combine all the ingredients for the pie itself, then the time to bake and about an hour to chill and it was done.

Yum. I definitely fall into the tart fiend category. I have a feeling I will love this tart recipe. It sounds scrumptious.
